Marinated tomatoes with mozzarella cheese is so simple to make. It’s perfect to take to a picnic or pot luck because the tomatoes are best when they marinate for a couple of hours and served at room temperature. You can make this dish the day before and place it in the fridge until you are ready to serve or take to your pot luck.

You may use any variety of tomatoes even cherry or grape. I love the heirloom types when they are in season. I believe cooking should be creative so feel free to mix and match using different colors and shapes of tomatoes. If you love basil add more if you don’t like basil leave it out and use cilantro or parsley. Using fresh herbs adds more flavor and nutrients to your cooking than using dried herbs, although you may substitute dried herbs if you like, it still taste great.

3 Tomatoes (or a pint of cherry or grape tomatoes)
1/4 cup fresh basil
2 green onions
4 ounces mozzarella cheese (any kind, in the picture I used mozzarella pearls)
2 cloves of garlic, minced
1/3 cup olive oil
2 tablespoons red wine vinegar

Thickly slice tomatoes and place them in a dish with a lid. Sprinkle on some fresh basil, green onions, and mozzarella cheese.
Make the marinade by whisking together the garlic, olive oil, red wine vinegar, salt, and pepper. Pour the marinade over the tomatoes and cheese.
Put the lid on the container and place it in the refrigerator. Let marinate for a couple of hours and enjoy!
